Never ones to rest on our laurels (or backsides as they say in Yorkshire), this is a new recipe with a distinctly Mediterranean flavour. The roasting brings our extra sweetness, whilst a hint of smokiness is provided by Anglesey's famous Halen Mon smoked salt, making this a great partner for salads or salami.
