Despite the obvious marriage of apples and cheese in this recipe, the flavours we developed with our cheesemaking pals took time to get right, which is probably why most cheesemakers don't venture in this direction. It was worth it, though, as the real apple pieces create a special texture and taste that benefits from the deeper notes of the cider in the background. On the nose, the cider is more dominant alongside the mature cheddar which amplifies the sense of a wonderfully aged cheese. Just add crackers for a complete cheese plate!
