Sometimes, it's best to keep things simple, especially when you're dealing with the powerful flavours of Vintage Cheddar (Extra Mature in cheesemaker-speak). The additional ageing of this cheese unlocks different flavours and textures from 'normal' cheddar. The flavours get punchier, but also more complex, with both zing and a very discernible nutty earthiness. The colour deepens from light straw to pale caramel, whilst the texture of Vintage Gold retains creaminess, but also gains a crumbliness from the extra maturation time. Presented in a classy black waxing, this is quintessential 'big cheddar'.
