If you're thinking charcoal is pretty 'out there' as a food flavouring, we accept that it's not something you'll often see on supermarket shelves, but wood charcoal (and ash) have been used, especially in cheese, for centuries. It only takes a small addition of charcoal to add a unique flavour, and even some texture, to this mature cheddar - it's a slight savouriness and smokiness that's really hard to define, but it does elevate the tang and buttery flavour of the cheese. It's a good choice as a grilled topping to finish off a cottage pie or served 'as it comes' with celery sticks, cherry tomatoes, pickled onions and a cider.
