Just think about a pub lunch on a summer's day. Nice, eh! Well, in a diversion from our usual playing with flavours, that's what we did and these naturally complementary flavours didn't take too long to get into balance. The creaminess and tang of the mature cheddar cheese sits really well alongside the decent drop of real ale and scoop of wholegrain mustard (yep, it's not industrial flavourings). It makes for spectacular cheese on toast or as an accompaniment to thick-cut cold ham.
